ABOUT
The Furusawa family was a wealthy farmer who played a central role in the community of Anyoji, located along the Shinano River, the largest river in Japan.
When you open the massive door of the house, you are greeted by a spacious hall with sturdy beams and pillars that can withstand heavy snowfall, a far cry from the appearance on the outside.
In this region, where up to 3 meters of snow falls every winter, the wisdom of the snow country is still alive today in the culture of food storage and fermentation.
ROOM
The Furusawa-Tei was built more than 150 years ago as a wealthy farmer’s house at the end of the Edo period. The heavy front door opens onto a straight earthen floor, and once inside, you are welcomed by a spacious room far removed from the exterior appearance, with sturdy beams and pillars that can withstand snowfalls of more than 3 meters.
FOOD
Using seasonal, locally grown ingredients, you will savor dishes that can only be tasted here and now. For example, the most delicious rice in Japan and flavorful vegetables and mushrooms are grown here thanks to abundant water sources such as melted snow. Wild vegetables and wild game from the satoyama are available each season. Fermented and stored foods made with wisdom to survive the winter. We invite you to taste the unique cuisine of the snow country.

This is an experience of cooking seasonal local dishes with local residents. Enjoy cooking and tasting dishes using seasonal ingredients and traditional stored foods while interacting with local residents. (In preparation)
